Doesn't This Sound Divine?

CHOCOLATE-COCONUT VEGAN ICE CREAM

  • 2 cans of coconut milk, chilled in fridge for at least 2 hours
  • 2 tbsps of sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 cup of flaked coconut

Combine first three ingredients in a mixing bowl until well-combined. Dump into frozen bowl of ice cream maker and turn on. Process for 25 minutes or until set, add in coconut then process a few minutes more until blended. Transfer to another container and freeze for about 30 minutes to set before serving. Sheer heaven.

I haven't made it yet, because we are all out of coconut milk. Dear husband has been on a smoothie making rampage the last while! I think I just might ask him to stop at the store on his way home today. If you give it a whirl let me know how it turns out.

Wah! Is there any way to make it without the ice-cream maker? It sounds super delicious. I need a dessert idea for this coming Wednesday.

you should google ice-cream making. i know i have heard of some way of doing it in ziploc freezer bags, but i'm not exactly sure on the technique.

this is so interesting..we just litterally picked up a half price ice cream making kit that you use t-shirts to make. it's almost like a science experiment..apparently you put these ingredients in a plastice bowl of some sort and put them in the t-shirt and twirl it around with 2 people twirling like a jump rope for 5 minutes and voila! i'll try out these ingredients in there if the other ones work. if this sounds confusing it probably is..it's after my bedtime here! sounds yummy!! wwhere did you eat it if you haven't made it yet??

martha - i didn't eat it i just found the recipe online. i really wanted to try it & i figured if i posted the recipe i actually would try it! we have all the ingredients & will make it when micah is done with his summer class today.

me again. i just made it so wanted to give my review. if you're using unsweetened coconut & coconut milk you may want to add more sugar. just taste it while you're mixing it up & add what you like. also, mine was ready in about 20 minutes, so i should have added the coconut in after about 15. it's a great alternative to dairy ice cream though & i think it's especially good drizzled with chocolate sauce. enjoy!
